Thermocouples should never be soldered to (or even mechanically connected to)
copper wires.  That creates more thermocouple junctions that produce
unpredictable changes to the thermocouple's calibration factor.  The
thermocouple leads should be long enough to connect directly to the terminals of
the measurement instrument.
