This bears repeating about once a week:

"Part of the beauty of the open-source hardware design is 
that, just like open-source software, not everyone will be 
pleased.  But anyone can modify the PCB layout to suit 
their individual preferences, then crank out as many 
boards as they wish.  Meanwhile, of course, lobbying for 
the changes they want.

You can home-brew double-sided PCBs.  I'm not that 
adventurous -- yet -- but see the Pic A Star for an 
example.
