The standard for the Ethernet Physical Layer (PHY) and Ethernet Media
Access Control layer (MAC) is the IEEE IEEE 802.3 standard.

One can download the standard from http://standards.ieee.org/getieee802/

Section 1 of the 802.3 document covers 10MB/s, Section 2 100 Mb/s, and
Section 3 1000Mb/s .

Here are the the typically IEEE standards for Ethernet over twisted pair
cabling.

IEEE 802.3i 10BASE-T Ethernet
IEEE 802.3u 100BASE-TX Fast Ethernet
IEEE 802.3ab 1000BASE-T Gigabit Ethernet

The base standard for Ethernet switches is the IEEE 802.1d, “Media
Access Control (MAC) Bridging". A Ethernet switch basically is a multi
port Ethernet Bridge. There are number of other IEEE standards that are
needed to turn a bridge into a switch. The bridging standard defines the
 basic operation of a switch.
