Excellent work Steve,
Minicom can be quite confusing especially to new users and by and large 
too fiddly.

I recommend "sudo apt-get install gtkterm", gtkterm is a Linux clone of 
Windows hyperterminal which I have used ever since I found it at least 
16 years ago.

Launch gtkterm - Configuration --> Port (ttyUSB0, 115200, none, 8, 1, 
none) OK and that's it.
You can also save the Configuration to avoid having to do the settings 
each time it's launched.
"File --> Save RAW File" so a record of everything is saved in case you 
need to browse it later.
