I'm currently looking at GigE for a board I'm working on.  
It's got better throughput than USB and can be placed a lot further
away from the from the PC than you can with USB (e.g., on top of a tower).

If you've got an FPGA, you shouldn't need an external processor, as
long as you stick to dealing with raw ethernet and/or UDP frames.
